Fresh Pasta

INGREDIENTS

• 600g White Flour
• 6 Eggs
• 200g Cherry Tomatoes
• 2 Tbsp Olive Oil
• Salt
• Fresh Basil
• Cheese (For Serving)

TOPPINGS

• Cheese
• Sourcream
• Salsa
• Guacamole

STEPS

It is a simple dish to make when you need to impress someone.


•Sift 600g of white flour into a bowl andmake a hole in the middle.


•Crack six eggs into the hole and slowly incorporate the flour into the eggs.


•Once combined, knead the dough for about 10 minutes or until smooth. Wrap the dough in biodegradable

plastic-wrap, or another sustainable alternative, and then put it in the fridge for at least 90 minutes.


•When ready, take your dough out of the fridge and roll it out to about 1-2mm thick - you should be able to
see through it.


•Cut the dough into strips and boil a big pot of water with lots of salt and olive oil.

•When your water is almost boiling, heat a pan with some olive oil and add your diced cherry tomatoes. Cook the tomatoes with some salt and pepper until they burst. Push down gently on the tomatoes to create a sauce.

•To prepare your pasta, add it to the water and cook for 3-5 minutes, or until it floats to the surface. Don’t drain

your pasta, but lift it straight from the pan, with an appropriate utensil, and add it to your tomato sauce. Don’t worry about some pasta water coming into the pan; it will make the sauce silky.

•Mix the pasta into the sauce (carefully) and serve your dish. Sprinkle some extra cheese and fresh basil over the top to make it even tastier!
